Farm to table

Our Farm
Vegetables, fruit, chestnuts, grape must, honey, milk, eggs, rabbit and rooster meat, even veal – all of this is grown or raised right here on our farm. We cultivate without chemicals, in harmony with nature. Our animals graze freely in the chestnut orchard, and when needed, we complement their diet with grains from neighboring farmers. Thanks to this, fresh ingredients make their way directly into our kitchen, becoming the foundation of the dishes we love to share with our guests.

Artisan Cheeses
It all began with Máša – our Jersey cow, who joined the farm in 2023 and gifts us with her wonderful milk. From this milk we make cheese much like we make wine – starting with one ingredient, with the help of microorganisms and time, an endless variety of flavors, aromas, and textures is born. We work with raw, unpasteurized milk, cultured with homemade kefir, and use only natural rennet.

Our selection ranges from soft fresh cheeses with herbs, to semi-hard cheeses ripened with noble mold, long-aged alpine-style cheeses, washed-rind goudas, cheddars, and even French-style chèvre (made from cow’s milk, with the same creamy texture but a milder flavor). While we don’t keep goats, we source goat milk from a nearby farmer to enrich our range.

We don’t sell cheeses directly, but you can enjoy them here during a guided tasting paired with our wines. And if you’d like to learn the craft, join us for our workshop “Make Your Own Cheese.”

From Our Kitchen
We prepare our dishes with care to preserve the natural quality and taste of every ingredient. Produce is processed quickly after harvest, without preservatives, and preserved gently through natural sterilization. We use apple cider vinegar, sea or Himalayan salt, and olive oil – often replacing sugar with grape must. Our plum jam is cooked down with no added sweeteners, and we also create a unique jam from the petals of Damask roses – an ancient Persian variety that has found a home in our orchard and rewards us each year with fragrant blossoms.

Upon request, we prepare farm-inspired meals for our guests – from simple spreads and nibbles to specialties like rabbit pâté, coq au vin, or rabbit in various styles. Although we don’t raise pigs, we are happy to serve roasted or boiled pork belly, or a stuffed pork knuckle roulade, always accompanied by pickled vegetables from our farm.

Taste the Farm, Pair it with Wine
Our farm is more than a place where wine is made – it’s a space where food and wine tell one story. Come and taste our homemade specialties paired with our wines, or roll up your sleeves and try cheesemaking yourself. We’ll be delighted to welcome you and show you what “from farm to table” truly means.
